01 - 1 large ripe mango, peeled and diced
02 - Zest and juice of 2 limes
03 - 2 tablespoons olive oil
04 - 2 tablespoons honey
05 - 2 cloves garlic, minced
06 - 1 tablespoon fresh ginger, grated
07 - 1 teaspoon chili flakes
08 - 1 teaspoon salt
09 - 1/2 teaspoon ground black pepper

10 - 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into 1-inch cubes
11 - 1 red bell pepper, cut into 1-inch pieces
12 - 1 red onion, cut into 1-inch pieces
13 - 1 large ripe mango, peeled and cut into 1-inch cubes
14 - Fresh cilantro, finely chopped, for garnish
15 - Lime wedges, for serving
# Directions:
01 - In a blender or food processor, combine diced mango, lime zest and juice, olive oil, honey, minced garlic, grated ginger, chili flakes, salt, and black pepper. Blend until a smooth marinade forms.
02 - Place chicken cubes in a large bowl or resealable bag. Add half of the marinade, reserving the remainder for basting and serving. Toss to coat thoroughly, cover, and refrigerate for a minimum of 30 minutes and up to 2 hours.
03 - If using wooden skewers, soak them in water for at least 20 minutes to prevent charring on the grill.
04 - Preheat a grill or grill pan to medium-high heat.
05 - Thread marinated chicken, red bell pepper, red onion, and mango cubes alternately onto skewers, distributing evenly.
06 - Grill skewers for 12 to 15 minutes, turning occasionally and basting with reserved marinade, until chicken is fully cooked with visible grill marks.
07 - Transfer skewers to a platter, garnish with fresh cilantro, and serve with lime wedges.
