08 - 8 slices sandwich bread
09 - 1 1/2 cups shredded mozzarella cheese
10 - 1/2 cup shredded sharp cheddar cheese
11 - 2 tablespoons unsalted butter, softened
12 - 2 tablespoons chopped fresh cilantro (optional for garnish)
# Directions:
01 - Whisk together peanut butter, soy sauce, lime juice, honey, sriracha (if using), minced garlic, and warm water in a bowl until smooth. Set aside.
02 - Arrange bread slices on a cutting board. Spread a thin layer of peanut sauce onto four slices.
03 - Combine mozzarella and cheddar cheeses in a bowl. Evenly distribute the cheese mixture over the peanut sauce-coated bread slices.
04 - Place remaining bread slices atop the cheese to create sandwiches.
05 - Spread softened butter on the outer sides of each sandwich.
06 - Preheat a skillet or griddle over medium heat. Grill sandwiches for 2 to 3 minutes on each side, until bread is golden brown and cheese is melted.
07 - Transfer sandwiches to a cutting board and allow to cool slightly. Slice each sandwich into sticks, approximately three per sandwich.
08 - Top with chopped cilantro if desired. Present warm with extra peanut sauce for dipping.
