01 - 2 cups finely chopped kale leaves, stems removed
02 - 1 cup chopped baby spinach
03 - 1 cup finely chopped broccoli florets
04 - 1 cup diced cucumber

06 - 1/2 cup pomegranate seeds
07 - 1/4 cup finely diced red onion

10 - 3 tbsp extra virgin olive oil
11 - 1 tbsp fresh lemon juice
12 - 1 tbsp apple cider vinegar
13 - 1 tsp Dijon mustard
14 - 1 tsp honey or maple syrup
15 - Salt and freshly ground black pepper, to taste
# Directions:
01 - In a large mixing bowl, combine the kale, spinach, broccoli, and cucumber.
02 - Gently massage the kale with a drizzle of olive oil for 1 to 2 minutes to soften leaves.
03 - Add the red bell pepper, pomegranate seeds, and red onion to the greens and toss gently.
04 - In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, Dijon mustard, honey or maple syrup, salt, and black pepper until emulsified.
