# Directions:

01 - Heat a large skillet over medium-high heat. Add ground beef or turkey and cook, breaking up with a spoon, until browned and no longer pink, about 4 to 5 minutes. Drain excess fat if needed.
02 - Add diced onion and bell pepper to the skillet. Cook for 3 to 4 minutes until softened.
03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Add rinsed rice, frozen corn, and frozen peas. Stir to combine evenly.
05 - Sprinkle salt, black pepper, smoked paprika, oregano, and optional chili powder over the mixture. Mix thoroughly.
06 - Pour in chicken or vegetable broth and bring to a gentle boil.
07 - Reduce heat to low, cover skillet, and simmer for 15 to 18 minutes until rice is tender and liquid is absorbed.
08 - Remove from heat and let stand covered for 5 minutes. Fluff rice with a fork.
09 - Top with chopped parsley or cilantro and shredded cheese if desired. Serve warm.
