06 - 1/3 cup all-purpose flour (about 1.4 oz), plus extra for dusting

# Directions:
01 - In a large mixing bowl, mix mashed potatoes, chopped ham, diced onion, parsley if using, egg, flour, salt, and pepper until a thick, uniform mixture forms.
02 - With floured hands, form the mixture into eight patties approximately 2.5 inches in diameter and 0.5 inch thick. Lightly dust each patty with flour.
03 - Preheat vegetable oil or butter in a large skillet over medium heat.
04 - Fry patties in batches without overcrowding, cooking each side for 3 to 4 minutes until golden brown and crisp.
05 - Transfer cooked patties to a plate lined with paper towels to drain excess oil and serve immediately while hot.
