Smashed Green Onion Potato Bombs

Featured in: Comfort Food

Crispy smashed potatoes are roasted until golden, then loaded with fresh green onions and melted cheddar cheese. Begin by boiling baby potatoes until tender, smashing them flat, and seasoning generously before oven roasting. The final touch includes a sprinkle of cheese and green onions, with an optional parsley garnish for color. This easy process creates a vegetarian, gluten-free side or appetizer that’s ideal for sharing. The flavor combines savory, herby, and cheesy profiles, with a delightfully crunchy exterior and fluffy interior. Enjoy hot, as is, or pair with sour cream or yogurt for dipping.
